Four handcrafted sauces made from the pig's own drippings, plus a signature dry rub — all artisanal and made from scratch. Includes: Passion Fruit Vinegar, Spicy BBQ (from pig drippings), Ube Blend (zesty lime & orange peel salsa), Guava BBQ (from pig drippings), and our Signature Dry Rub — a flavorful, soy-free seasoning that works as a rub or table condiment.
Part entertainment, part grand presentation — The Pig Ceremony transforms the moment your lechon arrives into an unforgettable experience. Two Polynesian Warriors carry the decorated pig on a ceremonial pig table to the sound of live ipu drumming. They're accompanied by four Polynesian dancers and fire dancers for a full dramatic entrance, followed by the blowing of the conch shell to signal that the feast is about to begin. Guests are invited to gather, take photos, and soak in the moment before our lechon carver steps in to carve the pig tableside. The full ceremony runs approximately 15–20 minutes and sets the tone for the entire celebration.
Everything in The Pig Ceremony — elevated to a full grand entrance. As the two Polynesian Warriors carry the lechon in on the ceremonial pig table, female dancers walk alongside sprinkling fresh dendrobium orchids onto the ground, just like a wedding procession. Two additional lei greeters move through the crowd, placing leis on seated guests as they watch the procession unfold. A fire breather delivers the wow moment, and a Roman Tiki Man rounds out the spectacle for a truly larger-than-life presentation. The conch shell signals the feast, guests take photos, and then our lechon carver takes center stage. This is the ultimate pig ceremony — a once-in-a-lifetime entrance for your celebration.
